What are your goals this year? Any New Year Resolutions?

I haven’t written any down, but after the holidays I am looking for some healthy meals to tuck into. (After all that Eggnog, thumbprint cookies, and pie — oh my!)

Plus, when the days are short and it’s dark before I leave work, there’s nothing like a colorful, warm dinner to brighten things up. Red Curry Noodle Bowls are exactly that.

Rice noodles cook in 5 minutes flat — a big advantage if you’re rushing to get dinner together after the gym or a long day! In fact, if you’re really in a rush, and you’re good at planning (eh-em — not me), you can make the coconut curry broth ahead of time, and then dinner will be on the table in 10 minutes!

Other than being 1) super delicious and 2) super cozy on a cold January day, this bowl has it all: complex carbohydrates, protein, fat (specifically, medium chain saturated fatty acids), and fiber. Plus: Vitamin C, folate, omega-6 and omega-3s, and essential minerals.

Thai Curry is usually served over rice, but sometimes you just want to mix it up! Rice noodles are slurpy, delicious, and a perfect match for curry flavors. (Besides, see above comment about cooking time… they cook faster than rice, which takes closer to 18 minutes.)

To store leftovers, I put cooked rice noodles in one pyrex dish and the broth and veggies in another. I’ve found that some brands of rice noodles will continue to soak up any broth or sauce after they’re cooked, so when you store them together the noodles get a little too soft for my taste. Keep them separate until it’s time to eat and you’re golden! (Sort of like ramen — add the noodles last!)

Red Curry Noodle Bowl with Shrimp & Broccoli

Ingredients:


For the red curry coconut broth:
  • 1 shallot, minced
  • 1 teaspoon coconut oil
  • 1 13.5-ounce can full-fat coconut milk
  • ¼ cup chicken broth
  • 4 tablespoons red curry paste
  • 1 tablespoon lime juice
  • 1 teaspoon maple syrup
  • Dash of fish sauce (optional)

  • For the shrimp & veggies:
  • 1 tablespoon coconut oil
  • 1 cup shrimp, raw, shelled & deveined
  • 2 cups broccoli florets
  • ½ cup sliced mushrooms

  • For serving: 
  • Brown rice noodles
  • 2 tablespoons scallions, sliced
  • Sesame seeds
  • Lime wedges
  • Hot sauce, such as sriracha

  • Directions:

    1. Make the sauce: Heat 1 teaspoon coconut oil in a sauce pan, and add minced shallot. Sauté until shallots are soft. Add coconut milk, broth, curry paste, lime juice, maple syrup, and a small dash of fish sauce (optional). Bring to a simmer, and stir until everything is well mixed.
    2. Sauté shrimp in veggies: Heat coconut oil in a large skillet or wok over high heat. Add shrimp and cook 2-3 minutes or until pink (about 1 minute on each side). Move shrimp to a plate, and reduce heat to medium. Add mushrooms to pan, and cook about 2 minutes, and then add broccoli. Cook for 3 mote minutes, stirring every minute or so — broccoli should be bright green and mushrooms should be soft.
    3. Cook noodles according to package. I used Lotus Foods Brown Rice Noodles, and boiled them in hot water for 5 minutes, and then strained them.
    4. Serve: Divide rice noodles between 4 bowls. Ladle coconut curry broth over top, and then use a spatula to divide shrimp and veggies between each. Top with sliced scallions, sesame seeds, lime wedges, and hot sauce to taste.

    Spicy Barbecue Shrimp & Pineapple Skewers

    It is 8pm, and I am laying side ways across my bed, soaking up the fact that I have nowhere to be and no reason to go to bed early or to say up late. The last week in Ecuador has been nothing short of amazing, but to get all of that goodness into 4 days, you must go go go! And now tonight: just me in this oversized king hotel bed, and this bar of chocolate. This is truly the good life.

    The last week I have been eating my fair share of seafood, while I can: Ceviche de Camarones, Tilapia Frito, Crovina Asado. Mejillones, almejas, y pargo. (Shrimp ceviche, fried tilapia, grilled sea bass. Mussels, clams, and red snapper). One would think I'd be done with it by now, ready for a hot burger or a sizzling chicken breast but I am not. Bring on the fresh shellfish! How lucky am I to travel all this way to dine like this? 

    And it's not just seafood of course: it's fruit too. We ate a grapefruit straight from a tree, and munched on fresh cacao fruit from a purple-ish red pod. We sipped coconut water, ate passion fruit and passed field after field of pineapples.

    This dish has a bit of everything going for it: the best of both worlds. The two ingredients I saw the most of the last week: succulent shrimp and sweet pineapple. Slathered in BBQ sauce for a North American twist. A splash of hot sauce--ají- to give it some zip.

    Spicy Barbecue Shrimp & Pineapple Skewers

    Spicy barbecue sauce is the perfect compliment to sweet pineapple! Perfect for the grill, but can be cooked in your oven, too.

    Serves: 4   |    Total Time: 30 minutes



    Ingredients:

    • 1 pound raw shrimp, shelled and deveined 
    • 1/2 cup barbecue sauce of choice
    • 2 tablespoons melted coconut oil
    • 1-2 teaspoons hot sauce (depending on spice preferences)
    • 1 cup fresh pineapple, cubed into bite-sized pieces 
    • Metal or wooden skewers

    Directions:

    1. Mix together melted coconut oil, barbecue sauce, and hot sauce in a small bowl.
    2. In the morning, place shrimp in a ziplock bag for marinating. Pour 1/2 of barbecue sauce mixture into bag over shrimp, and toss the shrimp to coat them in the sauce. Close the bag, and place in fridge for 4-6 hours, or until ready to cook. Reserve the rest of the sauce for using after cooking.
    3. Assemble: use metal skewers or wooden kabob sticks and skewer shrimp and cubes of fresh pineapple in an alternating pattern.
    4. Turn your oven to the Broil setting and allow to cook for 3-5 minutes, until shrimp are opaque and pink, and starting to brown on the edges. Remove from oven and allow to cool 5 minutes before serving. Note: You may also cook the skewers on a grill. Light your grill and bring it to high heat. Cook skewers for 2 minutes and the flip, cooking for 2 additional minutes or until shrimp are opaque and starting to char.
    5. Serve over a bead of rice or cauliflower rice.

    This blog has come a looooong way since it’s beginning days, when I would post just whatever we were eating that day. Cumin Lime Shrimp was one of the first recipes I posted, and was just that — what we were eating that day. Now, I make sure the recipes makes sense for someone to actually include in their life. Quick to make; delicious; thoughtfully curated. So, I needed to revisit this post.

    The original called for a marinade. Marinades are GREAT but I rarely plan enough to make a full-day marinade work. Even remember to pull something from the freezer to thaw in the mornings is hit or miss. Maybe I had more patience back in 2016. Or maybe as I’ve grow older I’ve become more busy. Probably both. Either way, the result is a need for more quick meals, even when I plan meals ahead for the week.

    SO, in the new version of this recipe, you simply do everything at once, and hallelujah, shrimp cook in just a few minutes so dinner is hot on the table faster than you can get through an episode of your favorite background Netflix show.

    Because the shrimp do cook fast, I recommend prepping whatever else you plan on eating for that meal before you start on the shrimp — maybe warm some tortillas, and prep a slaw, and slice avocado for quick tacos. Maybe make a salad. Just do the shrimp last so that they’re warm when you go to eat.

    Cumin Lime Shrimp

    Ingredients:

  • 1/2 pound shrimp, raw deveined and shelled
  • 2 cloves garlic, minced
  • 1/4 teaspoon paprika, ground
  • 1/2 teaspoon cumin, ground
  • Pinch of salt
  • Dash of freshly ground black pepper
  • 1 tablespoon coconut oil
  • 1/4 cup lime juice
  • 1/4 cup cilantro, minced

  • Directions:

    1. In a bowl, combine shrimp, garlic, paprika, cumin, salt, and pepper. Toss to coat shrimp.
    2. Heat coconut oil over medium-high heat. Tilt pan to coat in oil.
    3. When oil is glistening, place shrimp in pan. Do not over crowd pan — work in batches if needed. Cook shrimp for 1 minute undisturbed on first side. When shrimp begin to turn pink, flip them to the second side and cook for 1 more minute. Move cooked shrimp to a bowl, and repeat until all shrimp are cooked.
    4. Pour lime juice into skillet, and use a wooden spatula to scrape and bits from the bottom of the pan. Place coked shrimp back in pan and stir.
    5. Sprinkle shrimp with cilantro and serve hot as desired.
