I am making a resolution right now, today. Will you join me? I'm resolving to have brunch more often. 

I recently looked at my calendar and realized a year ago, some of my closest friends had come over for a spring brunch and I had actually said, "We should do this every season. Like spring brunch, summer brunch-picnic, fall brunch, and winter brunch." They all nodded in agreement, delirious on mimosas, coffee, or maybe just morning air. It was settled. We were going to brunch more.

That was a year ago, and now I'm looking back thinking, what happened?? Brunch slipped through my fingers, as I got caught up in life and forgot the glory that is late morning. The smell of freshly brewed coffee? A plate full of quiche? Morning light trickling through a big window? All of these things make my heart sing. So this is my ode to brunch, and my resolution to brunch more: Spinach, Artichoke & Aged Cheddar Crustless Quiche.

Maybe with it written down, I'll actually make it happen. Will you brunch with me? For you, for your mornings? Just think of the late morning sun. 

Crustless Spinach, Artichoke & Aged Cheddar Quiche

Ingredients:

  • 9 eggs
  • 1 cup milk
  • 1/2 cup aged white cheddar cheese, shredded
  • 1/2 pound frozen chopped spinach, thawed
  • 1 can artichoke hearts, strained
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon coconut oil
  • Salt & Pepper

  • Directions:

    1. Preheat oven to 350°F. Grease a pie pan, or line one with parchment paper. Set aside.
    2. Chopped artichoke hearts. Place artichokes and spinach in a mesh sieve and press the excess water out as best you can. This will help the quiche set. Place strained spinach and artichokes in a bowl.
    3. Now, heat the coconut oil over medium heat in a skillet and sauté the diced onion and minced garlic until the onion is translucent. Use a spatula to scrape onions and garlic into bowl with spinach. Stir mixture until onion is well distributed, then sprinkle the mixture into the pie pan, in an even layer.
    4. Next, sprinkle the cheese mixture in the pie pan in an even layer.
    5. Whisk the eggs and milk until frothy. Add a sprinkle of salt and a few cracks of pepper. Pour mixture over filling in pie pan, ensuring there is egg mixture filling all spaces.
    6. Place in middle wrack of oven and bake until golden and puffy, about 45 minutes. Center should be set and there should be no runny eggs. Allow to cool for 5 minutes before slicing and serving.

    You sure do like the snow a lot for someone that hates the cold. 

    That's me. I'm a total whiner when it comes to being cold, but when I hear a big snow storm is on the way, I audibly cheer. If I hear it's already snowing, I run to the window to see for myself. There's something magical about the snow that makes me feel like I'm 5 years old again -- like the world is one giant mystery and I'm just a little explorer, trying to figure it out. Trucking through the snow, with the right mindset, is one of my favorite parts of winter. 

    But- back to that whining part. I'm a super wimp about being cold. Like, take my down coat with me on a hike in July kind of wimp. If I owned one of those giant down onesie suits they take to Mt. Everest, I'd probably bring that with me too.

    Being a snow-loving, cold-hating outdoorsy person, here's what I've learned:

    1. Warm mittens are a must. Notice I said mittens. They're way warmer than gloves. 

    2. Bring that coat. You wont regret it. Sure, it's possible you won't use it, but if there's a chance you'll use it, bring it. While we're talking about coats and mittens let's just jump to it and say, bring all of the clothes. Hats. Long underwear. Ear muffs. The whole lot.

    3. Bring snacks you love. Ok, you need lots of energy to stay warm and snacks, good snacks, give you energy and something to distract you from the cold. Why do you think people like hot chocolate so much?! My favorite winter outdoor outing snacks: paleo fudge, nuts, cheese, hot cocoa, "sugar plums," Epic bars, snowball cookies, and fruit. 

    4. Make sure there's warm food waiting for you at home, or a cozy restaurant worth stopping at when your adventure is over. Soup is a great idea. Lots of soup, with plenty of spices to heat you up.

    Slow Cooker Taco Soup

    Ingredients:

  • 1 pound ground beef
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 1/2 cup frozen corn kernels (or diced zucchini Paleo)
  • 1 15-ounce can of diced tomatoes
  • 2 tablespoons minced canned chipotle peppers in adobo sauce (about 1-2 peppers from the jar)
  • 1 4.5-ounce can green chiles
  • 1 teaspoon ground chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon each of salt & pepper
  • 5 cups broth
  • Optional, to serve: jalapeño slices, cilantro, lime wedges, avocado, toasted tortilla strips (tortilla chips work too!)

  • Directions:

    1. In a large skillet, or the bottom of your slow cooker, sauté the diced onion, and minced garlic. Add the beef, breaking it up into grounds, and cook until browned. Once cooked, place in your slow cooker (if it is not already there).
    2. Now, add the bell peppers, corn, canned tomatoes, chipotle peppers, green chilies, spices and salt to the pot. Finally, add the broth.
    3. Place the lid on the slow cooker and cook on low for 8 hours.
    4. To serve: ladle hot soup into bowls. Top with cilantro, jalapeño slices, lime wedges, and a toasted tortilla strips

    Usually, I enjoy riding my bike to work. As you pull around a corner and head down a hill, there's no better word than freedom. Do you remember biking around the block as a kid? Just free to roll? Why leave those moments to the kids? When it's Friday afternoon, and you roll out of the office parking lot, the wind in your face, you'll know what I mean. 

    I'm writing this post because a few weeks ago I took a spill that landed me face first on the pavement. The asphalt ripped through my (brand new) down coat, my gloves, and scraped up my arms. My helmet saved my head, my sunglasses saved my face -- thank goodness (not to sound all "mom" on you, buuuut Wear your helmet!!).

    A lot of people offered me a ride home that day, and I almost took someone up on it when, after getting so many offers, I started to wonder if maybe I shouldn't ride home. The lazy little voice inside of me liked the sound of a warm car, and someone else at the wheel. The more I thought about it, the more my apprehension grew, until my lazy voice was coupled with my what-if voice, and suddenly I could hear nothing in my mind but whispers of "Warm caaaar..." "Nice and safe...." "Warm car....." "Don't you fall agaaaaain".

    Here's the thing: they offered me a ride because I was flustered, and they care. And that was really nice. But what no one can know, unless they can hear your thoughts, is the power of getting up and starting again. When I was a gymnast, this was the golden rule: if you fall, you get right back and try again. Otherwise, that what-if voice will only gain power and become a tyrant you can't ignore.

    At first, I rode terribly slow and cautiously. My eyes analyzed every bit of pavement in front of me: Is that the rock I hit? Oh! don't hit that rock. Go way over there, away from that sand pit.

    And then, anxious to get through a green light before it turned red, I cautiously peddled a little faster. After a few blocks, I realized I was free again -- all of that negative energy leaving my body with each exhale. It's just my bike. I know how to bike. I love to bike. 

    And hey, on the bright side, that crash motivated me to finally get a massage I've desperately been wanting. (Thanks, whiplash!) 

    When you fall, get right back up. Find glory in that freedom. And then, find something delicious to eat -- something like this moo shu. 😉

    Healthy Moo Shu Stir Fry Pork or Chicken

    Paleo, Gluten-Free, Grain-Free    |       

    Serves: 4   |    Total Time:



    Ingredients:

      Pork:
    • 2 tablespoons soy sauce or coconut aminos
    • 2 tablespoons apple cider vinegar
    • 1 teaspoon dark sesame oil
    • 1 pound boneless pork loin OR chicken thighs, cut into 1 x 1/4-inch strips (ask your butcher to do it for you!)
    • Stir Fry:
    • 2 tablespoons coconut oil
    • 1/2 cup (1-inch) sliced green onions
    • 3 tablespoons garlic, minced
    • 2 tablespoons ginger, minced
    • 4 cups shredded napa cabbage
    • 1/2 cup shredded carrot
    • 1/2 cup mushrooms, sliced
    • 1 cup bean sprouts
    • 2 eggs, lightly beaten
    • Sauce:
    • 3 tablespoons lime juice
    • 3 tablespoons soy sauce or coconut aminos
    • 1 teaspoon arrowroot powder
    • 1/2 teaspoon maple syrup
    • 1/4 teaspoon black pepper

    Directions:

    1. Mix the first three ingredients for the pork/chicken in a shallow pyrex or ziplock bag. Place the pork in the marinade, and either close the ziplock or cover the pyrex. Place in the fridge and allow to marinate for at least 4 hours.
    2. When ready to prepare the stir fry, remove the pork/chicken from the fridge and set aside. Heat 1 tablespoon of coconut oil in a large skillet or wok over medium-high heat. Once oil sizzles, add the pork/chicken the pan. Cook on pork pieces on one side for 5 minutes, stir and flip on the other side until the pork/chicken is cooked through. Remove pork/chicken from pan.
    3. Heat the additional tablespoon of coconut oil. Add the garlic, ginger, green onions, and mushrooms to the pan. Allow to cook for 3 minutes. Add the cabbage, carrots and the bean sprouts. Stir, and cook for 3 more minutes.
    4. In a separate bowl, whisk the eggs. Add to the pan, and use a wooden spoon to stir the eggs occasionally, just enough to scramble the eggs.
    5. Add the pork/chicken back to the pan. In a small bowl, whisk together the ingredients for the sauce. Drizzle the sauce into the pan, and stir everything until it was well coated. Cook everything for 5 more minutes.
